My lifelong friend and travel buddy, Jill shared this simple, melt-in-your mouth breakfast salad and it's now one of our favorite anytime meals ...
- Slice or dice:
- 1/2 Roma tomato (any tomatoes, really)
- 1/2 avocado
- Small wedge of red onion
- Make a salad—mix veggies with greens (spinach, kale, romaine lettuce)
- Fry an egg.
- Lay it atop salad.
- Drizzle the whole business with lemon juice.
